The beef industry has seen a remarkable transition over the last fifty years. Although, most of the animals are still born and raised by small ranches, the vast majority are processed at an industrial scale. Some groups are interested in reversing this transformation, but it is often regulation, not economics that makes this difficult. Coast Grown Cooperative, on the central coast of California, has found a way to bring the USDA inspectors to the ranch and Paso Robles Meat has found a way to process that meat in compliance without becoming a large slaughterhouse. In the end, the most important thing is that they have found a way to stay "local" which meets the requirements of a new type of consumer.
